Gluten-free, Sugar-free Maamoul

  • 3/4 cup ghee

  • 2 tbsp honey

  • 2 tbsp orange blossom water

  • 1/3 cup lactose-free milk (or plant-based milk of your choice)

  • 2 cups of white rice flour

  • 1/4 cup sweet white rice flour (mochiko flour)

  • 1/4 cup millet flour (oat or chestnut flour works as well)

  • Pinch of salt


  • In a large mixing bowl, combine the ghee with the honey, milk, and orange blossom water.
  • Add the flour and salt and mix until a soft cohesive dough forms. Add additional milk if the dough is too dry.
  • Forming the Maamoul
  • Lightly flour your mold.
  • Press dough into the mold so that the bottom is covered in dough.
  • Add a layer of filling.
  • Add an additional layer of dough so that the cookie is now level with the edges of the mold.
  • Tap the front edge of the mold on the counter top, with your hand underneath the mold to catch the cookie when it comes out.
