3/4 cup ghee
2 tbsp honey
2 tbsp orange blossom water
1/3 cup lactose-free milk (or plant-based milk of your choice)
2 cups of white rice flour
1/4 cup sweet white rice flour (mochiko flour)
1/4 cup millet flour (oat or chestnut flour works as well)
Pinch of salt
Directions
- In a large mixing bowl, combine the ghee with the honey, milk, and orange blossom water.
- Add the flour and salt and mix until a soft cohesive dough forms. Add additional milk if the dough is too dry.
- Forming the Maamoul
- Lightly flour your mold.
- Press dough into the mold so that the bottom is covered in dough.
- Add a layer of filling.
- Add an additional layer of dough so that the cookie is now level with the edges of the mold.
- Tap the front edge of the mold on the counter top, with your hand underneath the mold to catch the cookie when it comes out.
