Gluten-free, Sugar-free Maamoul

Ingredients

  • 3/4 cup ghee or grass-fed butter

  • 2 tbsp honey

  • 1 tbsp orange blossom water

  • 2 tbsp lactose-free milk (or plant-based milk of your choice)

  • 230 grams of white rice flour

  • 30 grams of ground flax seed

  • 2 tbsp hot water

  • 50 grams chestnut flour (or other gluten-free whole grain or nut flour, millet flour also works great!)

Directions

  • Measure out the 30 grams of ground flax and put into a small cup. Add the 2 tbsp hot or boiling water to the cup. Give it a stir and put aside for 5 minutes.
  • Melt the butter or ghee.
  • In a large mixing bowl, combine the melted ghee with the honey, milk, and orange blossom water.
  • Add the flour and the flax/water mixture and mix until a dough forms.
  • Forming the Maamoul
  • Lightly flour your mold.
  • Press dough into the mold so that the bottom is covered in dough.
  • Add a layer of filling.
  • Add an additional layer of dough so that the cookie is now level with the edges of the mold.
  • Tap the front edge of the mold on the counter top, with your hand underneath the mold to catch the cookie when it comes out.
